Deep in the pandemic, I found myself asking questions like "how hard is it to make bagels?" "What about pesto?" "homemade falafel?" "Do I need a food processor?" "Hey the only major cuisine I haven't tried to make is French, what is beef bourguignon?"

What can I say? Boredom is the ultimate motivator.

It escalated.

It turns out, most of these things aren't that hard; regular people invented and repeated all this stuff for generations without meat thermometers or year-round access to ingredients. It also turns out that making things with your hands after a long day at a computer is addictive. Next thing you know you wind up with a bookshelf packed full of cookbooks and about 5000 photos of the results.
